Some tasks, like sauting, require fast heating, while others, like braising, are better suited to slow heat. Aluminum and Copper heat and cool quickly. Cast Iron takes a while to heat but maintains that heat evenly for a longer time. Stainless steel is usually paired with one of the more conductive metals like aluminum, and should be a part of any good cook's set.
