The Shun Premier 5.5 inch Santoku is ideal for chopping, mincing and slicing. The in-between weight and size of this knife make it perfect for medium-sized kitchen tasks, from slicing carrots and shallots to mincing herbs to cutting chocolate or butter. Cooks with smaller hands or those who simply prefer a smaller, lighter knife may find that this smaller santoku becomes a top go-to knife. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.
