Why and when should you use a food mill instead of a food processor? When you need to puree soft foods that may have seeds or peels, a food mill will strain those out, giving you a velvety texture to your puree. This makes them perfect for making applesauce or tomato sauces. Use your food processor for harder foods, and your food mill for soft food, or food that has already been cooked. A potato ricer will do the same job as a food mill, but on a smaller scale, and not usually with the flexibility that a food mill with multiple blades will give you.
