Skimmers

A skimmer is a kitchen tool you may never have thought about before, but one you'll find yourself using often. Use a skimmer to remove fried foods from hot oil, for blanching vegetables, skimming foam off the top of boiling broth, or for lifting hardened fat from cooled liquids. Skimmers vary in depth, from almost flat to basket-like; the deeper-bowled ones are good for lifting larger pieces or quantities without the food sliding out.
