For those chefs and home cooks that prefer a longer blade, the Shun Classic 10 inch (25 cm) Chef's Knife is ideal for chopping, dicing, cutting and slicing. The wide blade keeps knuckles off the cutting board and is extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently "rocked" through fresh herbs or spices to produce a very fine mince. Shun Classic's thinner blades makes it lighter and less tiring to use than comparable European-style Chef's knives. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.

The beautiful Classic line of Shun Japanese cutlery features the look and benefits of Damascus steel, yet without its rusting problems. This look is achieved by 16 layers of high-carbon stainless steel, wrapped around the VG-10 center core. The D-shaped handle rests precisely in the curve of the fingers. The black PakkaWood handles provide the beauty of genuine wood, but since the wood is impregnated with a waterproof resin, the handles are as durable as plastic and dishwasher safe! (Although we NEVER recommend putting your knives in the dishwasher!)
