The Shun Premier 6 inch Boning and Fillet Knife is ideal for separating cooked or uncooked meat from bone. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats unless it is a smaller bone such as fish, frozen fruits, or stone cutting boards.

Each knife is hammered by hand with a technique known as tsuchime, giving a beautiful finish that works to reduce knife dragging while preventing food from sticking to the blade. The beautifully grained walnut PakkaWood handles nestle comfortably in the hand, and the Shun logo embossed on the bottom adds balance and beauty to the knife, whether in the hand or at rest in the block. It is not recommended to put Shun Premier (or any quality knife) in the dishwasher.
