The Shun Dual Core 8 inch Kiritsuke, known as a Master Chef's Knife in Japan, is ideal for slicing, chopping and portioning proteins. It also slices cooked proteins easily and gracefully. The Shun Dual Core Kiritsuke features a slightly curved edge so that it works well even with rocking cuts. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.
