Knives are made in two primary regions; Europe & Japan, and each has a very different approach to making their blades. Japanese knives are a harder metal with a 15% edge on both sides of the blade. German knives are a little softer and work better when breaking down meats. They normally carry a 20% edge but the newer, high-quality blades now have 15%.
