In Japan, this knife style is known as a Gyuto and is the Japanese equivalent of the chef's knife. In other words, it's an all-purpose knife. It is ideal for meat and fish, yet also performs beautifully on fruit and vegetables. Although the blade profile is narrower than the traditional chef's knife, it still offers plenty of knuckle clearance when cutting on a board. If you're looking for a lighter, more nimble multi-purpose kitchen knife, the Shun Classic 7 inch Asian Cook's Knife is sure to become your go-to knife for a wide range of food preparation tasks. While the blade is extremely strong and will hold its edge, Japanese Steel does not have flexibility so we do not advise using this knife on bone in meats, frozen fruits, or stone cutting boards.

The beautiful Classic line of Shun Japanese cutlery features the look and benefits of Damascus steel, yet without its rusting problems. This look is achieved by 16 layers of high-carbon stainless steel, wrapped around the VG-10 center core. The D-shaped handle rests precisely in the curve of the fingers. The black PakkaWood handles provide the beauty of genuine wood, but since the wood is impregnated with a waterproof resin, the handles are as durable as plastic and dishwasher safe! (Although we NEVER recommend putting your knives in the dishwasher!)
